Roasted Balsamic Asparagus with Feta





I love asparagus! This is a recipe that I adapted from this blog. This recipe is an easy to make side dish which would pair great with most main courses -- we paired ours with Tomato Soup Mac & Cheese.

Ingredients: 
-1 large bunch fresh asparagus 
-olive oil
-4 oz. feta cheese
-balsamic vinegar

Preheat the oven to 350.
Trim the ends off of your asparagus, coat in oil, balsamic vinegar, salt and pepper.
Bake for 25 minutes.
Remove from the oven and top with feta. 

The asparagus was nice and tender and the balsamic vinegar and feta were the perfect compliment to the vegetable. If you're looking for a quick dinner side dish this is one to try.
