Breakfast Casserole with Tater Tots

J. and I occasionally go through my Pinterest boards in an attempt to figure out what to make for the week. Since he laid eyes on this recipe he's been asking to make it. There was very little prep time and a long cook time which gave us a chance to get some coffee. You can find the original recipe here.

Ingredients:
-2-4 cups shredded cheddar cheese (use as much as you'd like, I used about 3).
-2 cups milks
-4 eggs
-2 pounds frozen tater tots
-Additional toppings if desired

Spray a 9x13 pan with cooking spray and spread a layer of cheese across the bottom.
I used two cups here.
Whisk together the eggs and milk.
Pour the egg/milk mixture over the cheese.
It will cover the cheese.
Now for the tots.
Top completely with the frozen tater tots, you'll use almost an entire bag. 
Top with more cheese.
Bake for 45 minutes at 350.
This is good to serve when you have a lot of people over for breakfast because it's very easy to divide and serve. The potatoes, cheese and eggs blend together deliciously, this recipe is a must try for anyone. You can also easily halve the recipe.

This recipe reminded me a lot of tortilla española.
