Cinnamon Roll Pancakes



There are some changes coming to Vegetarian & Cooking! -- namely that Becky will start guest posting more often due to my class schedule this semester. I'm not sure how long this change will last, but it will be for at least a few months. If we love it, maybe we'll keep it throughout the summer, if we don't then we'll change back.

Back to today's scrumptious blog, because these pancakes are hard to wait for. J. loves cinnamon rolls -- because they taste good and because they are easy to make. Since we've been dating, I've been eating a lot of  cinnamon rolls whenever it's his turn to make breakfast. This recipe from Recipe Girl kicks cinnamon rolls us a few notches. This recipe makes eight large pancakes and because they are cinnamon roll pancakes I don't think that you'll want to eat more than two or three. I cut this recipe in half to make four pancake since just two of us were eating breakfast.

Ingredients:
Cinnamon Filling:
4 tablespoons (1/2 stick) unsalted butter, just melted (not boiling)
1/4 cup + 2 tablespoons packed light brown sugar
1/2 tablespoon ground cinnamon

Cream Cheese Glaze:
4 tablespoons (1/2 stick) unsalted butter
2-ounces cream cheese, at room temperature
3/4 cup powdered sugar
1/2 teaspoon vanilla extract

Pancakes:
1 cup all-purpose flour
2 teaspoons baking powder
1/2 teaspoon salt
1 cup milk
1 large egg, lightly beaten
1 tablespoon canola or vegetable oil


Mix together all of cinnamon filling ingredients together.
The mixture should be thick like toothpaste, I added some additional brown sugar to make mine thicker.
Transfer into a ziploc bag.
Heat butter in a small saucepan.
Once melted, add in all of the other glaze ingredients.
Set aside until the pancakes are done.
Mix all of the ingredients for the pancakes.
Pour some pancake batter into a greased, heated skillet.
Swirl in the cinnamon filling by cutting off the tip of the bag.
I don't think my cinnamon was quite thick enough.
But it worked.
Once bubbles begin rising in the batter flip the pancake to the other side.
Cook briefly and put on a plate.
Yum!
Wipe out the skillet and repeat until all of the batter is gone. 
Top with the cinnamon roll glaze.
Enjoy. 


These pancakes were fantastic! Like cinnamon rolls though, these were super sweet, I will be making this recipe again, but I think it's best for special occasions. These were also a huge hit will cinnamon loving J.
If you're looking to make a special breakfast, this recipe is a great choice.
