Here is another recipe I made that mixes fruit and cheese, like Ciabatta Mozzarella Pear Sandwiches. This was really easy to make, it took less than 15 minutes total, and only had a few ingredients. The original recipe can be found here.
Ingredients: (for one quesadilla)
-small amount of brie thinly sliced (I used about a 1 inch cube)
|Slice the peaches and the thyme.|
|Sautee the peaches and thyme for 2-3 minutes.|
|Assemble the peaches and brie on one half of a tortilla.|
|Heat the quesadilla on medium heat until the bottom gets|
brown, then flip to cook the other side.
This was pretty good. I think I used a little too much thyme since I used fresh thyme. It was a good way to get some fruit into a meal even it the winter.
