Lucky Charm Doughnuts


This recipe was a combinations of ideas. The cupcake project blog had a recipe for Lucky Charm cupcakes. We wanted to change it up a bit and experiment with doughnuts. So we used a base baked doughnut from this recipe Alecia made for Cinnamon Sugar Doughnuts, and added some green food coloring for St. Patrick's Day, and some crushed Lucky Charms like in the cupcakes. These turned out to be really sweet and the perfect color.

Ingredients:
Doughnuts
-1 cup all-purpose flour
-3/4 cup sugar
-1 teaspoon baking powder
-1/4 teaspoon kosher salt
-1 extra-large egg, lightly beaten
-1/2 cup buttermilk
-2 tablespoons unsalted butter, melted
-1 teaspoons vanilla extract
-1/2 cup crushed Lucky Charm Cereal

Frosting
-1/2 stick unsalted butter, room temperature
-2 cups powdered sugar
-1 cup marshmallow fluff
-Lucky Charms marshmallows

Mix together the doughnuts ingredients.
Add a little bit a food coloring at a time to get the color you want.
We poured ours into a bag so it was easier to put in the trays.
Pipe the dough into a greased doughnut pan.
Bake at 350 for 15-17 minutes.
Cool.
Mix the frosting ingredients with a hand mixer.
The marshmallow buttercream will be really thick.
Pipe some frosting on top.
Top with Lucky Charm marshmallows.



These are really cute for St. Patrick's day, the green doughnuts and the shamrock marshmallows on top really pulled it all together. The doughnuts aren't too sweet, which is perfect because the marshmallow butter cream is incredibly sweet.
