Boston Cream Pie Pancakes


I made Boston Cream Pie for my brother's birthday last month and it was a hit with my family. J. and his roommates requested this recipe. This recipe is best made in stages unless you have a lot of time -- I made the pastry cream the night before, and then made the pancakes and ganache at the same time. The pastry cream needs to be made at least two hours before hand.

Ingredients:
Pancakes:
-Pancake mix according to package directions.

Pastry Cream:
-2 cups whole, 2 percent fat, or 1 percent fat milk
-1/2 vanilla bean, split lengthwise, seeds scraped out
-6 egg yolks
-2/3 cup granulated sugar
-1/4 cup cornstarch
-1 tablespoon unsalted butter

Chocolate Ganache:
-8 oz. Chocolate
-1 cup Heavy Cream
To make the pastry cream: Heat the milk and vanilla bean in a pan on medium heat, once it reaches a boil remove the pot from the heat and let sit. Whisk together the egg yolks and sugar in a separate bowl. It will look something like this. Add the cornstarch, whisk again. Add 1/4 cup of hot milk to the yolk mixture, whisk together.Add the rest of the hot milk.

Pour the mixture through a strainer back into the empty saucepan. Cook over medium heat, constantly whisking, until the cream is thick and boiling. Remove from the heat and stir in the butter. The custard needs to chill for at least two hours, but can be made 24 hours ahead of time (which is what I did and everything turned out fine). Cover with plastic wrap touching the top (like you would do for pudding).

Make the pancakes.
Bowl the cream on the stove top, slowly add into the chocolate stirring until smooth.
Build your stack.
Pancake, pastry cream, pancake, pastry cream.

As many as you want.
Pour ganache over the pancakes and serve.

A note, I thought that I was really, really hungry and that's why I had about nine mini pancakes on my plate. You probably can't eat that many, I only at about three or four before J.'s roommate had to finish my stack of pancakes. I thought that these tasted great, but they were really sweet so I don't know if I would want to eat them for breakfast or dinner again, maybe as a late night snack instead.
