Apple Cinnamon Rice


This rice was a little unusual, but it was really good. It was a little more of a sweet rice for a side dish, and I think it worked. The original recipe book suggested eating it as a breakfast side dish, and I think that would work really well, I may try that next time.

Ingredients:
-1/4 cup diced onion
-1/2 cup diced celery
-2 Tbsp. butter
-2 cups uncooked rice
-1 cup apple juice
-1 cup water
-1/2 tsp. cinnamon
-1 apple, chopped

Saute onion and celery in the butter.
Cook the rice according to the package directions, but use the
water and apple juice mixture to cook rather than just water.
Add the apple and cinnamon.
When the rice is cooked, add the celery and onion.
The apple and celery flavor cooked out a lot, so there was a really mild taste to this rice. I think it would go with anything well next time you are looking to change up a rice side dish.
