Grilled Caprese Sandwiches



Happy Grilling Wednesday. These four ingredient grilled caprese sandwiches are a good grilled appetizer or you could serve them as a light lunch like we did. Wedding season is upon us and I always have difficulty tiding myself over between the ceremony and dinner. J. and I grilled up these sandwiches at home before we went to the ceremony leaving us plenty of time to get ready, but full enough to make it to the reception.

Ingredients: 
-1 can biscuits
-1 tomatoes, cut into 1/2-inch slices
-1 ball fresh mozzarella, cut into 1/2-inch slices
-1/2 cup pesto

Cook the biscuits according to package directions, then grill to obtain a smoky flavor and grill marks.

This took about 3-5 minutes on each side, but every grill is different so check yours to make sure they're okay.

Make each sandwich by layering the ingredients, use as much or as little of each as you want.

I ate about two or three of these sandwiches for lunch, they were light and satisfying. These would also be cute served at a summer party as an appetizer or as a light dinner served with a salad or some grilled vegetables. I think the fresh mozzarella really added something extra to the sandwich, but you could use any kind that you like.
