Berry Cobbler with Sugared Star Shortcakes



I had some left over berries from another recipe that I needed to use and I was trying to look for a creative recipe to use them in. This recipe was the best one I found and one of the easiest.

This is a variation on a Southern Living recipe.

Ingredients: 
-2 cups fresh blueberries, strawberries and blackberries mixed
-1/2 cup granulated sugar 
-1 tablespoon lemon juice
-1/8 teaspoon almond extract
-2 (12-oz.) cans refrigerated buttermilk biscuits
-1 tablespoon coarse sparkling sugar
-Whipped cream, if desired

To make the berry sauce: Heat the first four ingredients in a sauce pan for about five minutes or until the sugar is dissolved.

To make the sugared star shortcakes: separate out the biscuits and flatten them. Then cut with a star-shaped cutter, and place on a lightly greased baking sheet; sprinkle with sugar Bake at 400° for 8 minutes or until lightly browned.

To build, place one star on the bottom, layer on the berry topping, add another star .
Serve with whipped cream on the side if desired, I just topped mine with a little powdered sugar.

These were delicious! This whole recipe took less than 10 minutes to complete, I was really impressed with the shortcakes being made from the biscuits, that was such a simple way to make this recipe and the savory biscuits went really well with the sweet berry topping. I will be making this recipe again.
