I was looking for pasta salad, but wanted to try something different. I came across this recipe, and it turned out to taste even better than it looked!
I got the original recipe from Divas Can Cook.
Ingredients:-1 box rotini
-3/4 cup salsa
-2 teaspoons taco seasoning
-1/2 green bell pepper
-1/2 cup cherry tomatoes, cut in half
-2/3 cup sweet corn kernels
-2/3 cup black beans, rinsed and drained
-1/2 cup romain lettuce, chopped
|Cook the pasta according to package directions.|
Mix with salsa and taco seasoning.
|Add corn, black beans, and cherry tomatoes.|
|Add the rest of your ingredients when you are ready to|
serve so they don't get soggy. I added some extra salsa too.
This was good to serve to a group because part of it can be made ahead of time, and the rest doesn't take long to make. Also, if you really wanted to make the whole thing ahead of time, I think it would work because I ate the leftovers from this for about 2 days and it still tasted good with everything sitting in the fridge mixed together. I think next time I would also add shredded cheese.
