Chocolate Coffee Ice Cream Sandwiches


This recipe makes 12 ice cream sandwiches, I cut it in half to make 6. If you choose to half the recipe, half of 3/4 of a cup is 1/4 cup plus two tablespoons. I had no issues with cutting the recipe in half, the cookies turned out fine.

Ingredients: 
-1 cup butter, browned
-3 Tbs espresso or strong coffee
-1 ½ cups sugar
-2 eggs
-1 3/4 cups flour
-¾ cup dark cocoa powder
-1 tsp baking soda
-1 tsp salt
-12 oz semisweet chocolate chips
-1 quart coffee ice cream

Melt the butter in a saucepan. Add in coffee. Add this mixture to your stand mixer. Add the sugar and beat for 2-3 minutes. Add the eggs. Slowly add in the dry ingredients until just combined. Stir in the chocolate chips.

Bake at 350 for 8-10 minutes.

Remove from the oven and let the cookies cool. Then build ice cream sandwiches and freeze for an hour before serving.





I really liked these, but my dad and J. thought that they were just okay. I thought the pairing of coffee and chocolate was amazing -- but I'm also obsessed with both of those flavors. We had some trouble finding coffee flavored ice cream and finally found Haagen-Dazs had some.
