I thought this was a creative was to make a loaded baked potato combination with a potato skin. This was a little healthier because it was baked rather than fried, and I got to get some broccoli into this side dish.

Ingredients:-2 medium red potato
-1/3 cups chopped broccoli
-1/4 cup shredded cheddar
Preheat the oven to 400.
|Put the potatoes in the oven for about 4 minutes to cook|
them through. Scoop out some of the insides. Sprinkle with salt
and bake for 5 minutes.
|Meanwhile, cook the broccoli in the microwave.|
Fill the potatoes with the broccoli.
|Top with cheese. Melt the cheese in the oven for about 3 minutes.|
This was a good side dish, it was flavorful, and not too much to eat one small potato per person. It was easy to make just 2 servings. I always like things that can be made for just one person, and this easily could, but it could just as easily be made for a bigger group, I think it would make a good party appetizer too.
