I love fried green tomatoes and I managed to pick the last few green tomatoes out of our garden before the frost. This sandwich was a nice way to enjoy the some of the last fresh produce of summer.

-2 large green tomatoes, sliced
-½ cup all-purpose flour
-¼ cup Panko breadcrumbs
-1 teaspoon salt
-¼ teaspoon pepper
-canola oil, for frying
-Spicy mayo (mix together hot sauce and mayo)
|Slice the tomatoes.|
|Dip each slice into the flour, then the milk/egg mixture, then into the panko/salt/pepper mixture.|
|Fry in hot oil until golden brown.|
|Cook the vegan bacon.|
|Build your sandwich. Lettuce, two fried green tomatoes, vegan bacon and a little spicy mayo.|
|Serve with additional fried green tomatoes if desired.|
The fried green tomatoes were really tangy, the bacon added a salty crunch and the spicy mayo added a little bit of heat. If you enjoy fried green tomatoes, then you'll enjoy this sandwich. Overall it was easy to put together, not too much work.
