Cauliflower + cheese = love. Cauliflower is one of my favorites, it is delicious and this is a little guilt free snack.
Adapted from Cinnamon and Spice and Everything Nice.
-5 cups fresh cauliflower florets with an inch of stalk
-1/2 cup panko crumbs
-2 tablespoons Parmesan cheese, grated
-1/4 teaspoon thyme
-1/4 teaspoon basil
-1/4 teaspoon garlic salt
-Dash of cayenne
-salt and pepper
-2 tablespoons whole grain mustard
-3 tablespoons water
-1/2 cup skim milk
-3 tablespoons whole grain mustard
-1 teaspoon whole wheat flour
-4 ounces sharp cheddar cheese, shredded
|Set up your ingredients: In one bowl three eggs, water and two tablespoons of mustard.|
In the other, the bread crumbs and seasoning.
|Dip the cauliflower pieces into the egg wash, then into the breadcrumb mixture.|
Bake for 20-25 minutes at 425.
|Whisk together that milk, mustard and flour.|
Bring to a simmer and then stir in the cheddar cheese.
