Mini Loaded Potatoes


This mini potatoes are perfect as an appetizer and would also be a good as a cute side dish for a dinner party. Use whatever toppings you'd like!

Ingredients: 
-20 small red potatoes
-1 tablespoon extra-virgin olive oil
-1 teaspoon kosher salt
-Sour cream
-Cheese
-Vegetarian bacon
-Chives

To make the potatoes, make sure the potatoes are coated well with the olive oil and then add the salt. Bake for 375 degrees for 30-40 minutes or until the potatoes are fork tender. Let the potatoes cool enough so that they can be handled. Cut a slit into each mini potato and then top with sour cream, cheese, chives and vegetarian bacon.
