Mini Pepper Nachos


My grocery store sells really great 1 pound bags of assorted mini peppers that was perfect for this recipe. These were a nice low carb appetizer, with all of the flavor of regular nachoes without the guilt.

Ingredients: 
-2/3 cup corn
-2/3 cup black beans
-2/3 cup pico de gallo
-salt and pepper to taste
-1 pound mini peppers, halved and seeded
-1 cup cheddar cheese, shredded
-1/4 cup green onions

Clean out the peppers and lay them on a foil covered baking sheet. 

Mix together the corn, black beans, pico de gallo, salt & pepper.
Spoon into the peppers. 
Top with cheese and broil for 3-5 minutes. 

Top with green onions.

Serve with sour cream if desired. 

I thought that these tasted really good. They didn't have the crunch that nachos made with tortilla chips have, but overall they were really good. It was also nice that these were colorful, I think it's better when a party has colorful appetizers, rather than appetizers that are all the same. You eat with your eyes first.
