This recipe is one of our revamp recipes, a spin on Nacho Pasta Salad. Nacho Pasta Salad has been one of my favorite blog recipes and this is a great way to freshen up the recipe.
-1/2 box pasta, cooked
-1 red pepper, roasted and diced
-1 green pepper roasted and diced
-1 tomato, diced
-1/2 bag of corn
-2 cups tortilla strips
-1/2 cup shredded cheddar cheese
-1/2 cup ranch dressing + 2 tablespoons adobo sauce
Pasta: cook the pasta according to package directions, it's best to use a small shape.
Dressing: Mix together the ranch dressing with the adobo sauce, if you want to dice some chipotle peppers and add them into the mix it will add some heat to the pasta salad.
Pasta Salad: Mix the pasta, dressing and all the vegetables together.
|Top with tortilla strips and cheddar cheese is desired.|
I meant to add cheddar cheese to this recipe, but it was so good without it that I didn't even notice I had forgotten to add it to the dish. The dressing was good, I liked that I could control the heat with the adobo sauce. The fresh vegetables were the best part, it added color and additional flavor to the dish that the other pasta salad didn't have.
