Lentil Pasta


I liked this pasta a lot, it was different than any other sauce I have had. The lentils added some extra texture to the pasta sauce. This was a recipe my mom had shared with me, it is easily adaptable to whatever extra vegetables you want to add, and can even adapt it to the timing you want to make this before you eat since it is in the crock pot.

Ingredients:
-1 box pasta
-1 cup chopped carrots
-1 cup chopped celery
-1 cup lentils
-1 jar marinara sauce

Combine the vegetables, lentils, and sauce in a crock pot. Cook on low for 12 hours, or cook on high for a few hours to lower the time. I haven't tried it yet, but I think next time if I don't want to start it as early, I will boil the lentils until they are partially cooked, then only put them in the crock pot for a few hours.





This was easy to make, everything went right into the crock pot. I used whole wheat pasta, it went together well, and made a filling but pretty healthy meal.
