Cake Batter Cupcakes



Happy Birthday to me! I enjoyed a great breakfast this morning with my girlfriends, will have a chance to spend time with my family this evening, followed by a great night out with my friends tomorrow. And....my birthday is the last day of class before Spring Break. The next week I will be able to do school work at my leisure and of course, I will spend a lot of time in the kitchen, especially in anticipation of next month. Recipe from Your Cup of Cake (I love, love, love her blog, check it out).

Ingredients: 
Chocolate Cupcakes:
-1 Box Devil's Food Cake Mix
-3 eggs
-1/2 C  oil
-1 C. buttermilk or milk
-2/3 C. Greek yogurt
-2 tsp. vanilla extract

Cake Batter Frosting:
-1 C. butter, softened
-1/3 C. yellow cake mix (dry), sifted to remove lumps
-2 tsp. vanilla extract
-2 Tbsp. milk
-3-4 C. powdered sugar
-Sprinkles and Cherries for decoration

Mix together all of the ingredients for the cupcakes in a large mixing bowl. Mix until incorporated using either an electric mixer or a wooden spoon with a lot of determination.

Bake the cupcakes for 20-25 minutes at 350 degrees.

Remove from the oven when a toothpick inserted into the center comes out clean. Cool before frosting.

In a small mixing bowl, beat the butter with an electric mixer until fluffy. Add in the other ingredients and whip until combined. My frosting was a little thick, I added about two-three tablespoons of milk to ensure that this could be piped.


Pipe the frosting onto the cooled cupcakes.

I didn't have a pastry bag, so I used a Ziplock bag.

Top with sprinkles. 





Make a wish! 



These cupcakes were good, but a little on the sweet side with the cake mix in the frosting. Overall, I think it was a good birthday treat, you can easily color the frosting or use piping tips to get whatever frosting effect you desire.
