The Bianca

Sometimes you need to think out of the box for a dessert recipe. This grilled cheese is a sweet finish to any meal and is beautifully plated. This one is a little non-traditional, but it comes from the Grilled Cheese Academy, a website full of gourmet grilled cheese ideas.

Adapted from Grilled Cheese Academy.

Ingredients:
8 ounces mascarpone cheese, at room temperature
1 teaspoon pure vanilla extract
6 tablespoons butter, at room temperature
8 slices cinnamon bread
4 tablespoons strawberry preserves
Caramel Sauce for ganish
Whipped cream for garnish, optional
Fresh red raspberries for garnish, optional

Melt the butter in a skillet and toast the bread sliced in the butter.

Whip together the mascarpone cheese and the vanilla.
Spread onto half of the toasted bread slices.

Top with strawberry preserves.

Top with caramel sauce.

Build the sandwich by topping with another toasted bread slice.
Drizzle with more caramel sauce, whipped cream and fresh raspberries.

I'm still torn as to if this is actually a grilled cheese or not, but since it came from the Grilled Cheese Academy, I'm willing to let it slide. Overall, this is pretty heavy, you'll probably need to eat it with a fork and if you're serving it as dessert, you should serve it after a light meal. The raspberries were really good with the mascarpone and the cinnamon bread went well with the caramel.
