Watermelon + Halloumi Grilled Cheese


This recipe takes grilled cheese to a whole new level. Halloumi is one of my favorite ingredients to work with. It is a Greek cheese which can be brushed with olive oil and grilled on an outdoor grill. The halloumi will crisp on the outside and become heated through, but will not melt like other cheeses. It is great to use in the summertime because you can grill it with all of the other ingredients and then incorporate it into a recipe.

Ingredients:
- 1/4 watermelon, seedless
- 8 ounces halloumi cheese 
- 1 cup lettuce
- 2 tablespoons balsamic vinegar
- olive oil to coat grill racks
Coat the racks of the grill (you'll want to clean it first, too).
Place the slices of halloumi on one side.
And the slices of watermelon on the other.

Cook until grill marks appear on both. 

To build: place a piece of halloumi on a piece of watermelon.

Drizzle with balsamic vinegar and top with lettuce and another watermelon slice.


The sugar in the watermelon caramelized nicely and formed grill marks. This was the first time I’ve ever grilled watermelon, it was delicious, warm all the way through but still juicy. The most important thing is making sure to oil the grill well prior to adding the halloumi or it will stick, overall a delicious appetizer grilled cheese, everyone enjoyed this sandwich.
