BLT Pasta Salad

Pasta salads are great for summer picnics and get-togethers. However, eating the same pasta salad over and over at every event gets boring. This BLT pasta salad helps to mix-up tradition quite a bit with a salad which is sure to make everyone happy.

I used vegan bacon in my recipe, you can substitute bacon if you're a meat eater.

Ingredients
-3/4 cup sour cream
-1/2 clove garlic, minced
-3 teaspoons dry ranch dip mix
-9 ounces cheese tortellini, cooked
-2 tablespoons crumbled vegan bacon
-3 cups fresh baby spinach
-1/2 cup grape tomatoes, halved

Mix together the tortellini, sour cream, garlic, and ranch seasoning.
Let sit for one hour in the refrigerator. 

Mix in the vegan bacon, tomatoes and spinach.
   

Dave and I both enjoyed this recipe and the leftovers kept pretty well for us to get a few lunches out of this as well. The flavors all really popped, ranch was of course the strongest flavor. This was a nice twist on traditional pasta salad with Italian dressing. I have previously made one with ranch dressing, but I liked using the sour cream and ranch seasoning much better -- it had a better consistency.
