Brussels Sprouts Pita Pizzas


This is one of those great week night recipes that is full of flavor, easy to make and a ton of veggies. Overall this will take less than fifteen minutes to put together Dave and I made two pizzas and used the rest of the filling in scrambled eggs the next morning.

Recipe from Kitchen Treaty.

Ingredients:
-4 pita breads
-1/4 cup olive oil + a little more for drizzling
-3 medium cloves garlic, minced 
-1 cup shredded fiesta pepper jack cheese
-1 green onion, sliced
-1/2 pound Brussels sprouts
-1/8 - 1/4 teaspoon crushed red pepper flakes, to taste
-Kosher salt and freshly ground pepper to taste

Mix together the olive oil and garlic in a large bowl. Brush the entire pita with the olive oil/garlic mixture. Add the green onions. Thinly slice the Brussels and then add them to the remaining olive oil/garlic mixture. Spoon over the pita. Top with cheese and seasoning. Bake 8 minutes at 425.










These were full of flavor. The spicy cheese paired with the red pepper flakes added quite a bit of heat to this dish. If you use a cheese without additional pepper then it shouldn't be too spicy. Dave and I both enjoyed this recipe.
