Skillet Tater Tot Casserole


Tater tots for breakfast? This isn't the first recipe I made that used tater tots for breakfast and it probably won't be the last. It's so easy to bake those while putting together everything else on the stove top. This is versatile, you can use whatever veggies and seasonings you prefer.

Inspired by Voodoo and Sauce.

Ingredients:
-1/2 green bell pepper, diced
-1/2 red bell pepper, diced
-8 ounces of mushrooms, sliced
-3 green onions, chopped
-Butter
-1/2 bag of tater tots, cooker
-3-4 eggs, beaten
-Handful of cheese
Heat the butter (or oil) in a cast iron skillet.
Saute the mushroom, green pepper, red pepper and green onion until softened. 


Add half a bag of cooked tater tots. 

Add the eggs. 

Top with cheese.

Bake at 350 for 15 minutes. 

  
  
Serve topped with additional green onion.

This had excellent flavor, we ate almost the entire pan for brunch. The vegetables were nicely cooked and the texture of the dish resembled a Tortilla Espanola. I didn't use seasoning in this because I think the tater tots had enough salt in them, but you could add additional salt. I was happy with how easily this all came together.
