Cauliflower Pizza Casserole



Although pizza is one of my favorite foods, I can appreciate that it is not entirely healthy. This casserole lightens up pizza a little bit by replacing the carbs with cauliflower. I won't lie to you. This isn't as satisfying as eating a medium pizza from your favorite chain on a Friday night, but the flavors are all there minus the carb guilt.

Ingredients:
-1 large cauliflower, cut into florets
-1 tablespoon oil
-2 cups pizza sauce
-1/4 cup black olives, sliced
-2 green onions, sliced
-1 cup mozzarella, shredded
-1/4 cup parmesan, shredded
-1/4 teaspoon oregano

Coat the cauliflower in olive oil and season with salt and pepper. Roast at 400 for 20-30 minutes. Turn the oven down to 350. Toss the cauliflower with sauce and oregano. Top with cheese, olives, and green onions. Bake at 350 for 20 minutes. 








As I mentioned above, this was good, but it's not the kind of pizza you want if you are looking for a really tasty food-guilty slice of pizza. The flavors were all there though, if you wanted to lighten things up or are on a diet (this would be good for Weight Watchers because the veggies are all zero points).
