California Breakfast Burritos



Breakfast is probably my favorite meal of the day -- lazy weekend breakfasts are the best. This recipe is pretty easy to put together and adds an interesting twist of French fries to the breakfast dish. I served this for a brunch style meal, but this would be a good "breakfast for dinner."

Ingredients
-4 (12”) flour tortillas
-French fries
-Eggs
-4 strips vegan bacon
-5 eggs
-Splash of milk
-½ teaspoon salt
-¼ teaspoon pepper
-1 teaspoon hot sauce 
-Handful shredded cheddar cheese
-½ cup sour cream
-½ cup (chunky) salsa
-2-3 teaspoons lime juice
-¼ teaspoon ground cumin
-Salt and pepper to taste
-Hot sauce to taste 

1.) I used frozen french fries and cooked them according to package directions. You can use whatever type of fries you'd like store-bought or homemade.
2.) Cook the vegan bacon.
3.) Make scrambled eggs using the eggs, milk, salt and pepper, hot sauce and shredded cheese.
4.) Make the sauce by mixing the sour cream, salsa, lime juice, cumin, salt and pepper plus hot sauce.
5.) To make the burrito layer the french fries, vegan bacon, scrambled eggs and sauce into tortillas.





Overall we really liked these. I found this to be a filling meal, especially since all of the ingredients were in the wrap. If I made this again I would make sure to add some avocado to it, I think it needed a little bit of green and a fresh element to it.
