Fried Zucchini with Pizza Dip



Fried zucchini is one of my favorite summertime foods. It has such a great flavor and texture. It is also a great food to pair with a fun dipping sauce. I made a recipe with fried zucchini a few summers ago and paired it with hibachi yum yum sauce -- that creamy delicious sauce served at all hibachi restaurants.

For this recipe I whipped up a simple pizza dip to serve with the fried zucchini.

Ingredients:
Fried Zucchini
-1 zucchini, sliced thinly
-1 cup of flour*
-2 eggs*
-1 cup bread crumbs*
-Oil, for frying

*You may need more of these ingredients depending on how large your zucchini is.

Pizza Dip
-4 oz of cream cheese, cubed
-1 cup marinara sauce
-4 oz goat cheese

1.) To make the fried zucchini: Fill three bowls, one with flour, one with eggs whisked and one with breadcrumbs. Dip the zucchini slices into the flour, then eggs, then bread crumbs. Fry in a skillet of hot oil until golden brown on each side. Drain on a paper towel covered plate and salt if desired.
2.) While the zucchini is frying heat the marinara sauce in a small saucepan. Add in the cream cheese and goat cheese, stir constantly until combined. 





I was so happy with how this recipe turned out. The pizza dip was incredibly rich and full of flavor. The cream cheese and goat cheese helped to keep the dip creamy, but it was still thick enough for the dip to transfer easily to pieces of fried zucchini. Dave and I both really enjoyed this recipe and I will be making it again before summer is over.
