Vegetarian Crunch Wrap Supreme


Where was this recipe when I was in college?! Even now I waste money at Taco Bell when the recipes are so easy to make at home. This crunch wrap is much larger than the original and tastes just as good. All things that you love about a crunch wrap are included. You can adapt this for any taste. Mine is vegetarian, but this would be easy to do with any addition you would like.

Recipe from A Beautiful Mess.

Ingredients:
-1 can refried beans
-2 cloves garlic, minced
-1/4 teaspoon cumin
-2-3 tablespoons olive oil
-1 cup shredded cheddar cheese
-12 large burrito-size flour tortilla shells
-6 corn tortilla shells
-2 avocados
-1 lime
-2/3 cup Greek yogurt
-1-2 cups finely chopped lettuce
-1 roma tomatoes, cubed

Fry the corn tortillas until crispy. In a large pot heat the refried beans with the garlic and cumin. Mash together the avocado with the juice of one lime. Add salt and pepper.

Lay down one flour tortilla. Spoon refried beans into the center, add cheese, avocado, the crispy tortilla, then lettuce, greek yogurt, and any other toppings.

Cut another flour tortilla to cover the gap. I got three circles out of a large tortilla. Fold the crunch wrap onto the center. Cook unfolded side down first in a skillet of heated oil. Place a clean plate on the back to keep it from unfolding. Flip and cook the folded side until browned.











This was delightful. The cheese was melted and all other ingredients were heated through just right. This was almost twice the size of the one you buy at Taco Bell and so easy to make. This is a recipe I will be using many more times.
