Here's another easy melon salad recipe from Food Network. I wish we had been buying melons all summer, they are so easy to snack on and incredibly healthy.
Ingredients:-1/2 cantaloupe, sliced
-1/4 cup chopped hazelnuts
-Parsley, a pinch
-2 tablespoons olive oil
-1 tablespoon rice vinegar
Toss the sliced cantaloupe and chopped hazelnuts with the olive oil, rice vinegar and a pinch of sea salt. Layer on the plate and then drizzle with more olive oil; top with shaved parmesan and parsley.
The dressing on this is light and helps to bring out the flavors of the melon. The hazelnuts add a nice crunch, the cheese adds an additional element of saltiness and the parsley adds great color contrast. A great starter for a summertime meal.
