Buffalo Blue Cheese and Crispy Black Bean Burgers


I made a similar quinoa burger this summer (Southwest Quinoa Sliders with Avocado Yogurt Sauce) and they were a hit with our friends. When I saw this version, I knew it would be perfect for Sandwich Wednesday because it's filling while incorporating some fun elements.

Ingredients: 
Burgers
2 cups cooked quinoa
1 1/2 cups black beans, mashed
1 large egg, lightly beaten
1/3-1/2 cup buffalo sauce
1 clove garlic, minced
1/2 teaspoon salt + pepper
1/2 cup sharp cheddar cheese, shredded
1/4 cup crumbled blue cheese
3 tablespoons olive oil
6 of your favorite burger buns, toasted
Tater tots or french fries, cooked, for topping

Buffalo Cheese Sauce
-1 stick (8 tablespoons) butter
-1/4 cup all-purpose flour
-1 1/4 cups milk
-3 ounces cream cheese
-8 ounces freshly grated sharp cheddar cheese
-1 tablespoon sriracha
-1 teaspoon seasoned salt
-1/2 teaspoon pepper

In a bowl combine the quinoa, mashed black beans, egg, buffalo sauce, garlic, salt and pepper, shredded cheese and blue cheese  Mix well and form into six equal burgers. Bake at 350 for 15-20 minutes or until crispy.

To make the cheese sauce heat a medium saucepan over medium heat. Add the butter, and once it’s melted and bubbly add the flour -- whisk together to create a roux and cook for 1-2 minutes until mixture gets golden in color. Add the milk, stir and turn down heat to low. Continue stirring until milk thickens. Add in the cheddar cheese and continue to stir until mixture is smooth. Stir in the sriracha and seasoned salt and pepper.

To build the burger add the tater tots (or fries) to the burger, any other desired toppings and the cheese sauce.

This burger was incredibly filling, I could only eat half at a time. The actual burger was full over flavor, both the blue cheese and the buffalo sauce gave it great flavor. The cheese sauce helped to mellow it out a little (I like spicy things though, so the extra buffalo sauce didn't bother me).
