Butternut Squash and Caramelized Onion Pizza


This was the main course that we served at our last game night -- followed by yesterday's Slow Cooker Apple Cake. I tried to stream line this recipe to make it easy to make, especially if you will have company over. I prepped the butternut squash and caramelized onions ahead of time and was able to get this into the oven just prior to our guests arriving.

Adapted from Oh My Veggies

Ingredients:
-1 small butternut squash
-2 tbsp. olive oil
-1 large onion, halved & thinly sliced
-salt + pepper to taste
-1 prepared pizza crust
-1/2 of caramelized onions
-1/2 c. shredded Italian blend cheese
-2 tbsp. sage leaves, cut into ribbons
-2 tbsp. chopped toasted walnuts
-1/4 cup of butter, browned

To make the butternut squash I wrapped one in foil and cooked it in the slow cooker on low for four hours. This makes the butternut squash incredibly soft, so be careful removing it from the slow cooker because it will try to break apart. Let the squash cool for ten minutes and then slice in half. Remove the seeds and pulp, then scrape the squash flesh out of the shell into a bowl.

To make the caramelized onions I heated two tablespoons of olive oil in a skillet over medium heat. Then added the onion slices. Sit frequently until onions are browned. Put the onions in a bowl also.

When you're ready to prepare the pizza, stretch the pizza crust on a greased pizza pan.


Top with cheese, then the butternut squash and onions, then more cheese.

Bake according to package directions (mine called for baking at 425 for 13-15 minutes for thin crust). Meanwhile toast the walnuts in a skillet until just warmed (they are very easy to burn). And fry the sage ribbons in hot oil until crispy (this will take a few minutes.)

Remove the pizza from the oven and slice. Top the pizza with the walnuts and fried sage. Drizzle the browned butter over top.




This pizza was delicious -- the butternut squash paired well with the fried sage. The caramelized onion added an additional layer of flavor. The browned butter helped to keep the pizza moist since there was no other sauce added. Everyone at dinner loved this recipe and it is perfect for fall.
