Iced Oatmeal Applesauce Cookies


One of my friends from college is currently stationed in Alabama for Air Force training. I made these cookies (without the glaze), because they would be easy to mail and would hold up during transport. I glazed the leftover cookies for Dave and me to take in our lunches.

Ingredients:
-4 tablespoons unsalted butter, melted
-1 cup packed light-brown sugar
-1/2 cup granulated sugar
-1 large egg
-1/2 cup chunky-style applesauce
-1 1/2 cups old-fashioned rolled oats
-1 1/4 cups all-purpose flour
-1/2 teaspoon baking soda
-1/4 teaspoon baking powder
-1/4 teaspoon coarse salt
-1 3/4 cups confectioners' sugar
-1/2 cup cinnamon chips
-3 tablespoons pure maple syrup

In a medium bowl mix together the butter and sugars. Add the egg and applesauce. Stir until well combined. Stir in oats, flour, baking soda, baking powder, and salt. Stir in the cinnamon chips.

Using a 1 1/2-inch ice cream scoop, drop dough onto baking sheets lined with foil and sprayed with cooking spray. Space the cookies 2 inches apart. Bake cookies at 350 until golden and just set about 13 to 15 minutes.

While the cookies bake whisk confectioners' sugar, syrup, and 3 tablespoons water until smooth. Once the cookies are cool drizzle the icing over the cookies.



Dave and I both enjoyed these cookies. The cookies were moist and chewy, the cinnamon chips added a nice texture to the cookies and glaze had nice flavor. These were nice for fall, I would make them again.
