Pumpkin French Toast



This is the second recipe in my fall quest to enjoy pumpkin. Pumpkin Alfredo Sauce was a success, however, I did not enjoy this recipe. If you're a pumpkin lover, you're sure to. Dave ate most of this and was more than happy with it.

Recipe from Closet Cooking.

Ingredients:
-2 eggs
-1/4 cup milk
-1/4 cup pumpkin puree
-1/4 teaspoon vanilla
-1/2 teaspoon cinnamon
-1/8 teaspoon nutmeg
-2 tablespoons brown sugar
-8 slices of bread

In a small bowl combine the eggs, milk, pumpkin puree, vanilla and seasonings. Dip each slice of bread into the batter. Cook in a skillet of melted butter until golden brown. Serve with powdered sugar and syrup.






As I mentioned above, this recipe wasn't something that I enjoyed. Dave said it didn't get as crispy as he wanted. He said it was firm on the inside and crispy on the outside, but no as crispy as other French toast because the pumpkin made it more moist. He thought it tasted like pumpkin pie and enjoyed it.
