Roasted Red Pepper and Feta Hummus

 


Hummus is incredibly easy to make and if you make it at home it allows you to easily customize the recipe. Making hummus at home is also much cheaper than store bought hummus. This recipe can be doubled or tripled.

Ingredients:
-1 (15 oz.) can chickpeas, drained (juices reserved)
- 1 whole red pepper, roasted and peeled
-1/4 cup feta cheese
-2 cloves garlic, peeled and smashed
-2 Tbsp. tahini
-2 Tbsp. lemon juice
-1 Tbsp. olive oil
-1 tsp. cumin
-1/4 tsp. smoked paprika 
-pinch of salt, to taste

The key to incredibly smooth hummus is to remove the skin from each chickpea, although it's a little tedious, the results are well worth it. Squeeze each chickpea gently and it should pop out of the skin.

Roasting peppers is easy. Coat the pepper in oil and broil until blackened on all sides. Put the pepper in a bowl, cover with plastic. Wait 5 minutes, then the skin should be easily removable. The stem should pull out taking the seeds with it.

Add all ingredients to a food processor or blender.

I added some of the reserved chickpea juice in order to make mine easier to blend. Depending on how high powered your machine is you may or may not need to. Serve with additional paprika and feta on top.









I served this hummus at a game night with friends -- it was a hit. I think it would have been better with a little more roasted red pepper, however, it did have good flavor. It was relatively smooth, but the feta made it less smooth than it could have been.
