Apple Cinnamon Energy Bars

You're probably thinking that these don't look too appetizing. However, when you think about it, pretty much all granola bars are brown anyway. I found this recipe in an attempt to use a half bushel of apples in many different ways. These energy bars are very easy to take a snack for work or school.

Apples Used: 20/40

Recipe from Bright Eyed Baker.

Ingredients:
-8 ounces pecans (2 cups)
-5 3/4 ounces rolled oats (2 cups)*
-8 1/4 ounces pitted and halved dates (1 1/2 cups)
-2 teaspoons cinnamon
-1/4 teaspoon salt
-8 ounces chopped granny smith apples (or similar) (2 cups)

Preheat oven to 350°F.

Line a baking sheet with foil and spray with cook spray. Spread the pecans and oats out on it in a single layer. Bake in the preheated oven for 10-15 minutes.

While the pecans and oats are toasting line an 8x8 square pan or with foil and spray with cooking spray.

Once the pecans and oats are toasted, combine them in a food processor along with the dates, cinnamon, and salt. Process until the mixture is coarse and crumbly, with no large pieces remaining.

Add the chopped apple and pulse until there are no longer any large chunks left. Continue to process until the ingredients start to clump together. This was a slow process because there are a lot of ingredients, use a spatula to move things around if needed.

Transfer the mixture to the prepared 8x8 pan and press down until flat on top.

Bake the bars in the preheated oven for 20 minutes. Cool for 10-15 minutes, and then slice into
bars. Once completely cool, lift out of the pan. Store in an airtight container in the fridge.

Overall these were just okay. It was nice to not have to buy granola bars for the week. They were sweet and a little tart, but Dave didn't seem to enjoy them as much as he likes other recipes. For my first foray into making granola bars I think it was a success, but I'm not sure if it's something I will be making again.
