Autumn Chopped Salad


Fall foods can be a little heavy on the cream and cheese. This recipe is a nice, light dinner. It took less than ten minutes to make and I had most of the ingredients on hand already.

Recipe adapted from Iowa Girl Eats.

Ingredients:
-6 cups chopped romaine lettuce
-1 pear, chopped
-1 apple, chopped
-1/4 cup walnuts, chopped
-1/4 cup dried cranberries
-1/4 cup crumbled feta cheese
-1/4 cup Asiago Peppercorn Dressing
-2 Tablespoons balsamic vinegar
-Drizzle of honey

To jazz up the dressing, combine the Asiago Peppercorn, balsamic vinegar and honey in a small bowl.

Combine all other ingredients and then add the salad dressings, toss the salad greens in order to evenly coat them with the dressing.

Dave and I both enjoyed this salad a lot. The dressing was tangy, but a little sweet. The salad components were a wide range of tastes as well -- the apples were tart and so were the craisins, the pear was sweet and the feta added some salt. Overall we were incredible happy with how this turned out and it was nice to have a very fresh dinner.
