Purple Raider Truffles

It's game day!! My alma mater will be playing in the Stagg Bowl this evening (Division III Championship game, for those who do not follow D-III football). Last year I made these adorable Purple Raider Pinwheel Cookies to celebrate, this year please enjoy these Purple Raider Truffles. Dave and I attended several Mount Union games this season and although we will not be travelling to Salem, Virginia for the Stagg Bowl, we will be cheering on the Purple Raiders from home. Go Mount Go!

You can find the candy melts online or at your local craft store. I purchased the purple candy melts from a local party store.

A Vegetarian & Cooking! original.

Ingredients:
-1 8 ounce package reduced fat cream cheese softened
-1 package of oreos (or oreo-like cookies)
-1 14 ounce bag of purple colored candy melts
-1 14 ounce bag of white chocolate

I cut this recipe in half to make 14 truffles, if you make the full recipe you will not have leftover cookies, chocolate and cream cheese and will likely have 28-30 truffles.

First, crush the oreos (using either a food processor or the good-old-fashioned way a ziplock bag and a rolling pin) and in a large bowl combine the oreos and cream cheese.

They will form a dough.

Using a tablespoon, scoop out portions of dough and roll the portions between your palms to form balls. Place the balls on a parchment paper rimmed baking sheet and put in the freezer for ten to twenty minutes.

After ten to twenty minutes heat the purple melting candies and white chocolate in separate bowls according to the instructions on the bags (usually heat for 30 second intervals, at half power, removing the bowl in between each interval and stirring until chocolate is melted). I did not use a full bag, you can always melt more chocolate if you need to, so start small!

Coat each truffle with chocolate, I did half purple and half white, you can divide them however you want.

Once coated, using a small ziplock bag with a corner cut off, drizzle each truffle with the opposite color chocolate. Freeze for twenty to thirty minutes to set the chocolate.

These were incredibly easy to make and we were thrilled with how they turned out. You could easily customize these for your favorite team -- the candy melts come in a wide variety of colors. Go Mount!
