Champagne Soaked Berries

Happy New Year!! I'm looking forward to many wonderful things in 2015. This recipe incorporates fresh berries and everyone's New Year favorite, champagne.

Adapted from My Recipes.

-1/2 cup Champagne 
-1 (16-ounce) package fresh strawberries, halved 
-2 (6-ounce) packages fresh blueberries 
-Cool whip
-8 biscotti cookies, coarsely crumbled

Pour the champagne into a large bowl, add the berries and chill for half an hour.

To serve, place 3/4 cup berry mixture in each of 8 bowls. Top each serving whipped cream, divide crushed cookies and repeat the layers once, ending with a dollop of whipped cream and some more crumbled cookies.

Easy to make. The crumbled biscotti added a nice texture to the dessert. The berries were colorful and fresh, with a subtle tartness. The whipped cream added sweetness. This is something I would make again if I had some leftover champagne that was flat.
