Gnocchi and Tomato Bake


For an easily assembled meal that's quick to prepare, gnocchi and tomato bake delivers on comfortable and delicious Italian notes. Makes a great main course for two, with leftovers.

Recipe from Kayotic Kitchen.

Ingredients:
-16 oz gnocchi
-1 onion
-1 red pepper
-1 clove garlic
-14 oz diced tomatoes
-1/4 t oregano
-1/2 t basil
-1 c cheese, grated or thinly sliced

Chop the onion and red pepper and saute with garlic until soft.


Add the diced tomatoes, oregano, salt and pepper to the saute pan, heat to a simmer. Stir in the gnocchi and simmer for 10 minutes. Add the basil.

Transfer to an 8x8 baking dish.


Cover the gnocchi and tomatoes with shredded or sliced cheese, I used a three cheese blend.


Broil until cheese is molten and bubbly.



Served with cheesy garlic bread.


The beautiful cheese crust on this pasta dish as well as the wonderful aromas from the tomatoes, onion, pepper, and garlic, made this a very attractive and appetizing plate. Serve on a chilly night for a good warm and filling meal.
