Ravioli with Tomato Basil Cream Sauce


This is an incredibly easy pasta dish which can be made after a hectic day at work. This is the kind of recipe I would turn to after a long day of class/work. It's the kind of dish that seems like it took a while to make -- when in fact it doesn't take long at all. And pasta + cheese is a nice comfort dish after a hard day.

Ingredients:
-1 (20-oz.) package refrigerated four-cheese ravioli
-1 (16-oz.) alfredo sauce 
-8 oz can diced tomatoes
-Half jar of sun-dried tomatoes diced
-1/2 cup chopped fresh basil
-1/3 cup grated Parmesan cheese 

Cook raviolis according to package directions.
Meanwhile heat the alfredo sauce, sun dried tomatoes, diced tomatoes, basil and parmesan.

Once the ravioli is done, drain it and add it to the pot with the sauce. Stir to combine.



This turned out to be really good. It was nice to get the occasional sun-dried tomato hidden among the diced tomatoes. This dish was full of color and a nice mix of fresh and store-bought ingredients. Dave and I both enjoyed how this turned out.

    1. Sun-dried tomatoes in a jar of olive oil. Sometimes the pieces are pretty big, so I diced them.
