Herbed Goat Cheese Appetizer


On Valentine's Day we have a tradition of staying at home and enjoying a multi-course homemade meal together. We split this recipe as an appetizer while the main course was in the oven -- it paired nicely with a glass of wine. We found this to be plenty as an appetizer for two people, you can increase the recipe if you would like to serve more people.

Ingredients
-1 1/2 tablespoons finely chopped fresh Italian parsley leaves
-1 teaspoon finely chopped fresh rosemary leaves
-Dash of dried thyme leaves
-1 teaspoon lemon zest
-1 teaspoon coarsely cracked black pepper
-1/4 teaspoon salt
-1 5-ounce log soft fresh goat cheese
-1/2 tablespoon extra-virgin olive oil
-Toasted baguette slices

In a small bowl combine the parsley, rosemary, thyme, lemon zest, pepper and salt. Stir to combine. Roll the goat cheese in the herb and seasoning to coat. You want it to be coated on all sides.

Set aside and toast some baguette slices for serving.

Once you're ready to serve, drizzle half a tablespoon of olive oil over the goat cheese and enjoy. 


This recipe was incredibly easy to make, which was helpful because we didn't want to spend all day in the kitchen, so I was able to make this appetizer pretty easily, then help Dave with the main course. Splitting this with a few slices of toasted bread was enough for us to feel satisfied with our appetizer, but not overstuffed to prevent us from enjoying the other courses. The herbs and seasoning added a lot of flavor to the goat cheese and made for a pretty presentation.
