Red Velvet Waffles



Happy Valentine's Day. Hopefully you spending your day with someone you love whether it be a romantic partner or a group of friends.

When I was a freshman in college a group of girls in my dorm planned a big girl's day out for all of the women on the floor who were single on Valentine's Day. They got pedicures and went out to dinner as a group, I thought it was an awesome way to do something special without lamenting your relationship status.

Dave and I were not dating last Valentine's Day, but had just starting "talking" (modern dating terms are a little weird). Together we prepared a delicious homemade lasagna and intend to continue that tradition tonight, rather than making a reservation at a restaurant three months in advance.

These red velvet waffles were made in a mini-waffle skillet that I received for Christmas. To make mini waffles cut the recipe in half to make 10-12 waffles. For a full sized waffle iron you will make 10-12 waffles by leaving the recipe as is.

Ingredients
-2 cups all purpose flour
-3 tablespoons granulated sugar
-1 tablespoon unsweetened cocoa powder
-4 teaspoons baking powder
-¾ teaspoon salt
-2 eggs
-1¾ cup buttermilk
-⅓ cup unsalted butter, melted and cooled
-2 teaspoons vanilla extract
-½ teaspoon white distilled vinegar
-Red food coloring (liquid or gel)
-Cream Cheese Frosting 

To make the batter, mix the flour, sugar, cocoa powder, baking powder and salt together in a large bowl. In another bowl whisk together the eggs, buttermilk, melted butter, vanilla extract, vinegar and food coloring.

Mix the wet ingredients into the dry ingredients until well incorporated, but be sure not to over mix the waffle batter.

Using the desired waffle cooking system, cook the waffles until the batter is gone. 



Add the cream cheese frosting to a piping bag and pipe over the waffles as desired. I used one tablespoons of frosting for four waffles. 




These waffles were wonderful, Dave and I happily enjoyed them as a breakfast for dinner meal. They were not difficult to make at all and we had all of the ingredients on hand. These had that classic red velvet ingredients (buttermilk, cocoa powder, and white vinegar) and a wonderful coloring for Valentine's Day. You could leave the cream cheese frosting off if you'd like, but I don't think it would be the same without the frosting.
